Little Fish In A Big Pond

This is me...and my thoughts randomly scattered for other people to read who find comfort in these random thoughts of others.

" Well..... I'm kind of a big deal...."

So, i haven't totally disappeared from the blogging community....i just have zero time!!!

Recent developments: none
Boyfriend: non existant
Friends: good, but hundreds of miles away in each direction
Family: not close enough, either
Job: 2 too many
Finances: not enough...

But ya know what! i did learn something new this week! i'm slowly but surely learning how to cook! Yep, it is DEFINITELY looking good for me now...
Working in an interior design environment, ou pick up a lot of copies of Better Homes and Gardens....which has a ridiculous amount of interesting stuff in it!! ( i'm so becoming an oldie)....
but really...the food all looks so great....i just look for things that aren't hard or expensive....or meaty...
SO....THIS one was called Tarragon Tuna Melt...mmmm
It was really good...and i made deviled eggs to go with it. very tasty. It does look a little burnt in that picture doesn't it? but i assure you, its the lighting...

I'm very excited, i've never been one to "cook" anything. i usually "burn" everything...as my roomates can attest.....i've been the only one to almost burn down every apartment either with a curling iron left on ( oops! happens all the time!) or me experimenting with chicken......

So, tomorrow night, i'm making dinner with a friend of mine, that i'm really excited to see.....its been a while and she's going through a lot right now....but i had this really good sandwich at Einstein's Bagels and i'm going to try to make that......we'll see......potentially disasterous.....but i still am in the "sandwich zone".....can't go too wrong with a sandwich..

anyway...updates on THAT one later....
XXOO

and for all you wierdo moms who i know want the recipe for that delectible looking sandwich up there....

Tarragon Tuna Melt

1/3 mayo
3 tbsp. italian parsely
2 tbsp. fresh chives
1-2 tbsps. fresh tarragon
1 tsp. dijon mustard
ground pepper
1 12oz. can tuna
sourdough bread
tomato slices
white chedder cheese
butter

Mix together tuna, tarragon, chives, parsely, pepper, dijon, and mayo together....i added celery, too....Butter sourdough, put together sandwich with tomatoes and cheese, toast sandwich in a skillet until its golden brown, or until the cheese melts...MMMMMM!!!

Calling your devoted readers "wierdo" is not going to win you any points you know! But THANKS for the recipe, it looks YUMMY and since dad and I have to eat more fish I'm always looking out for that. Are you still (as in, since you left home) leaving your curling iron on? Some habits die hard huh? With or without fire hazards we still miss you! Have fun cooking! (And keep sending recipes!)

I feel your pain! I almost started a grease fire once trying to fry some chicken....always use a fry daddy.
